Carrot Cake Gluten Free

A deliciously moist carrot cake with a hint of cinnamon OR add rum for a more grown up celebration!

 

 

Ingredients
140g unsalted butter , softened, plus extra for greasing
150g golden caster sugar
1 tbsp golden syrup
250g carrots , grated
150g sultanas
2 eggs , beaten
200g gluten-free flour
1 tsp gluten-free baking powder
1/2 tsp xanthan gum
1/2 tsp cinnamon
50g mixed nuts, chopped (optional)

Topping
250g mascarpone cheese
2 tsp icing sugar
Method

Beat the butter and sugar until creamy

Add the golden syrup and carrots and sultanas and mix, then add the eggs

Add the flour, baking powder, xanthan gum, cinnamon and most of the nuts and mix well

Pour into a lined loaf tin and bake for 45mins at 180ºC

 

Topping

Mix cheese and icing sugar and spread over the top

 

Alternative:

Replace the cinnamon with 1 tsp vanilla essence and 60ml of rum, then add 2 tbsp and serve on the side rather than as a topping
