Ginger Snaps Gluten Free

Easy gluten free ginger snaps will be a treat with ice cream or a cup of coffee

 


Ingredients
50g Olive spread or margarine (use Pure Olive or sunflower for dairy free)
100g Golden Caster Sugar
2 tbsp Black Treacle or Molasses
1 Egg
200g gluten free flour mix (or use 100g Rice flour, 50g Cornflour,50g Potato Starch Flour
1/4 tsp Salt
1 tsp Bicarbonate of Soda
1/4 tsp Ground Ginger
1/2 tsp Ground Cinnamon

Method

1. cream the spread and sugar, then add the egg and treacle and mix well

2. sift the other ingredients into the mixture and mix well

3. on a greased baking tray, dollop teaspoons of mixture (spaced well apart)

4. Bake for 10 - 12 minutes in an oven 180 C
