Lemon Cupcakes Gluten Free
Delicious lemon cupcakes! Gluten free easy to make cakes
Ingredients
250g Butter unsalted, softened
250g Golden caster sugar
4 Eggs
1tsp Natural lemon extract
250g flour sifted
1tsp xanthan gum (optional)
185ml Milk (more if needed to make a more of cake batter consistency)
2tsp Baking powder
Add lemon icing

Method
1. Preheat the oven to 180°C and put cases in a muffin tin (12)
2. Cream the butter and the sugar
3. Add the eggs one at a time and beat well
4. Add the flour, baking powder, xanthan gum and whisk, add as much milk to form a cake batter
5. Share the mixture between the cake cases
6. Bake for 20 mins and cool on a wire rack
7. top with simple white icing or lemon buttercream
