Chocolate Orange Muffins Gluten Free

Delicious chocolate orange muffins that look great and are delicious, top with orange butter icing and grated chocolate
250g Butter unsalted, softened
250g Golden caster sugar
4 Eggs
250g flour sifted
1tsp xanthan gum (optional)
185ml Milk (more if needed to make a more of cake batter consistency)
2tsp Baking powder
2 tbsp Cocoa for one bowl of mixture
2 tsp orange natural essence for the other bowl of mixture
1 tsp orange colour (mix red and yellow to make orange)

Add orange icing and sprinkle with grated chocolate


1. Preheat the oven to 180°C and put cases in a muffin tin (12)

2. Cream the butter and the sugar

3. Add the eggs one at a time and beat well

4. Add the flour, baking powder, xanthan gum and whisk, add as much milk to form a cake batter

5. Divide the mixture into 2 equal bowls

6. Add cocoa powder to one and the orange essence to the other and mix well

7. Put a tablespoon of each mixture into the cake cases 

8. Bake for 20-25 mins and cool on a wire rack


9. top with simple orange butter icing and grated chocolate
