Chickpeas... an ancient food source

Chickpeas have been used for over 7500 years, used in Turkey, Iraq and in the hanging gardens of babylon. The Ancient Egyptians used chickpeas and the name appears under the name 'falcon-face' in a list of plant names on a papyrus school text.

Nutritional Value 

Chickpeas are an excellent source of molybdenum (an essential element in human nutrition), a good source of folic acid, fibre and manganese (helps the body utilise key nutrients). Chickpeas are a good source of protein, and minerals such as iron,copper, zinc and magnesium. They can help lower cholesterol and improve blood sugar levels which makes them a great food for diabetics.

Chickpeas can cause an allergic reaction to those who are sensitive to them.

Gluten Free Gram Flour

Gram flour is made from ground chickpeas, it can also be bought as also known as chickpea flour, garbanzo flour, or besan. Coeliacs should ensure the gram flour is not produced on a production line with other flours in case of cross contamination.

Gram flour can be used in equal proportions of water, can be used as an egg replacer in vegan and egg-free cooking.

1. Rinse and drain cooked chickpeas

2. Spread out on an un-greased baking tray and cook on medium heat for 2–3 hours then turn off oven and leave overnight to cool.

3. Use a mortar and pestle and grind to a fine consistency.
