Happy Kids With Healthy Bodies

Apricot & Walnut Quinoa Porridge (or any dried fruit)

Add any dried fruit and nuts to this delicious gluten free porridge with a dollop of creme fraiche or natural yogurt or soya yogurt or coconut milk
160g quinoa (dried)
350ml Milk (cow's milk, rice milk, coconut milk, almond milk etc)
8 dried apricots (partially hydrated are softer)
8 walnut halves


1. Wash the quinoa (follow the instructions on your packet for washing)

2. Put in a saucepan

3. Add the milk of your choice and just bring to the boil and then simmer for 20 minutes (stir occassionally and ensure it doesnt boil dry)

4. The quinoa will have a slight bite when it is cooked and appear curly. Most of the milk will have been absorbed.

5. Remove from the heat and mix in the apricots

6. Throw the walnuts on the top, a dollop of creme fraiche (Add a splash of milk if preferred)


Add a banana, dried cranberries for more fun and taste
