Viennese Creams

A delicious Viennese Cream - great for parties and special occassions
250g butter
250g caster sugar
1 medium free-range egg
1tsp vanilla extract
125g ground almonds
375g plain gluten free flour
water to bind dough

150g butter
300g icing sugar
1tsp vanilla essence

Beat the butter and sugar with an electric whisk until light

Whisk the egg and vanilla

Add the almonds and flour

Roll into 48 even sized balls (use drops of water to help bind mixture)

Place on a baking tray 4cm apart

Flatten each ball

Bake for 10-15 minutes (until golden brown)

Leave to cool



Whisk the butter, icing sugar and vanilla until light

Place 1 tsp of filling on one biscuit and sandwich with another
