Gluten Free Chocolate Tartlet

The caramel filling with the gluten free chocolate tart and toppings makes this too good for the kids. Make big tarts for the adults and minis for the kids :o)
225g gluten free flour
30g cocoa powder
25g butter, cubed
10g melted butter
40g icing sugar
1 tsp xanthan gum
1 egg mixed with 3 tsp of water

150ml double cream
100g plain chocolate
50g milk chocolate
150g caramel sauce (salted if available)
40g white chocolate melted


1. Put the gluten free flour mix, cocoa, icing sugar and butter in a food processor to form breadcrumbs

2. Add the beaten egg mixture and use the pulse function until a dough ball is formed

3. Wrap in cling film and cool for 2 hours


4. Heat the oven to 180°C

5. Brush a tart tin with butter and dust with cocoa powder


6. Roll the dough thinly on a floured surface

7. Use large cutters to cut circles into the dough, place in the tart tin and prick the base several times. 

8. Bake for 15-20mins

9. Leave to cool


10. Heat the cream and plain and milk chocolate over a low heat or in the microwave

11. Stir until smooth, and cool for 5 minutes

12. Add the caramel sauce to the cooked tarts

13. Top with the chocolate mixture

14. Melt the white chocolate and drizzle over the choc mix

15. Chill fo 1 hour
