Red velvet Gluten Free Cupcakes

Smooth as velvet and the ultimate indulgent luxury cake, these party cakes are a focal point for any birthday, teen themed birthday!

40g softened butter - unsalted is better
100g caster sugar
1 small egg
80ml buttermilk (or you can make this substitute by adding 2 tsp lemon juice to 80ml of milk and allowing to set and go sour for a few minutes)
3 tsp red food colour
¼ tsp natural vanilla extract
½ tsp Bicarbonate of Soda
1 ½ red wine vinegar
75g flour
1 tsp baking powder
1 tsp xanthan gum (optional)
¼ tsp salt
15g cocoa powder

Red Chocolate Butter icing:
110g softened butter
175g icing sugar
2 tsp red food colouring
1 tsp vanilla essence
GF decorations

1. Pre heat the oven to 180°C

2. In a large bowl cream the butter and sugar until light and fluffy.

3. Beat in egg, red colour, vanilla extract and the buttermilk (or substitute and mix well - use an electric mixer if available

4. Add the bicarbonate of soda and vinegar and add to mixture.

5. Sift flour baking powder, xanthan gum , cocoa and salt together into the bowl

6. Share the mixture between 12 muffin cases

7. Bake for 15-20mins until an inserted skewer is removed clean

8. Let cakes cool on a cooling rack



1. Allow the cakes to cool completely

2. Cream the butter and the icing sugar, add the red colour and vanilla essence until shiny and smooth

3. Pipe the butter icing onto each cake

5. decorate with your gluten free topping.
