Shortbread Biscuits

Crunchy shortbread - wheat free and gluten free - fab taste and great for the whole family
 
Ingredients
100g cornflour
160g white rice flour
120g golden caster sugar
175g margarine
Method

1. Sift cornflour, sugar and rice flour

2. Add the margarine and mix until you can form a dough ball (add more flour if to sticky)

3. Flatten dough slightly and cut into 16 pieces

4. Roll each piece into a ball and place on a baking try and flatten unil 1cm thick (leave space around each to ensure they dont stick together

5. Bake in the oven at 150°C for 20 - 25 mins (turn if neccessary to help brown evenly)
