Almond Fingers

Crunchy Almond Fingers, with a great taste and fun to make - great for dipping in yogurt! - The kids could use cutters for more interesting shapes!
 
Ingredients
150g Gluten Free Flour
75g Golden Caster Sugar
50g Ground Almonds
1 tsp Xanthan Gum
125g Margarine / Olive Spread
15ml Vanilla Essence
milk if needed
Method

Sieve the flour, sugar, almnds, xanthan gum, salt into a bowl. Add the margarine and vanilla essence.

Mix well and form a dough ball (add a drop of milk or water if needed to form a ball)

Roll ball out into a rectangle and slice with a knife into fingers

Score each finger with a kife

Bake for 15 mins at 180°C
