This cake pop way will save you hours of scooping cooked cake mixed with cream cheese and and then rolling into a ball and hoping they'll stay on the lolly stick! But these cake pop moulds are simply fantastic.This recipe is great of you want perfect lollies or simply decorate as bite sized balls!
Recipe will make about 60 cake balls or pops (or 12 regular muffins in a tin or double to make a four tier birthday cake)
170g gluten free flour
2 tsp of baking powder
1/2 tsp xanthan gum
170g spread (olive or dairy free etc)
3 tbsp golden syrup
2 tbsp cocoa powder
1-2 tbsp milk to help with consistency (rice, dairy or soy milk)
Topping - icing sugar and edible sprinkles and stars etc
OR 400g of melted chocolate (milk or white choc works well)
Put all the ingredients into a bowl and mix well
Divide into the cake pop moulds - fill the bottom half completelty (nb dont over fill)
Bake for 15 mins
You can dip these carefully into candy melts if you want or melt chocolate and dip.
It is worth skewering your ball with the lolly stick, removing, filling with icing and then reinserting...
I tend to zigzag ordinary icing over the ball and then if really adventurous dip in edible stars
