Cheesy Bread Balls

Yummy warm cheesy gluten free dough, crispy and delicious cheese bread, great for picnics and parties
250ml Full Fat Milk / Semi is fine
400g Tapioca Flour (or Tapioca Starch)
200g Grated Mature Cheddar Cheese
250ml Olive oil
3 Eggs
1 tsp Salt

Fillings - ham, soft cheese, cheese & chutney etc

When i first read the recipe, i though they would be quite a greasy ball once cooked BUT not at all the balls care crunchy on the outside and hollow so brilliant to stuff, a great alternatice to sandwiches and wraps


Heat the oven 220ºC

Combine, milk, oil, and salt and boil

Put tapicoca flour into a bowl and add half the boiled mixture

Stir and keep adding the milk mixture until a firm dough ball is made (you may not need all the milk mixture)

Let the ball cool and then add the cheese. Use a mixer it's easier

Add the eggs

The mixture should now be like thick cake batter but will not pour

Place a dollop of mixture into 24 muffin tin holes (do not fill to top, 3/4 will do)

Bake in your hot oven for 15 minutes or until golden brown (leave plenty of space above the tin for rising

You should have cheesy bread that is crispy on the outside and hollow inside

Serve warm


The hollow inside of the balls is a great way to get the children to stuff with ham, cheese, cucumber sticks, carrot etc. Get the children having fun!

Gluten Free, tapioca flour cheesy bread balls

Pastry Gluten Free Recipe

Perfect gluten free pastry for tarts, pies and pasties - sweet or savoury!
200g GF Flour Mix
1/2 tsp salt
100g butter (hard margarine can be used or half quantity with lard)
1 beaten egg
2-3 tbsp water


1. Add the flour into a bowl and the salt

2. Cut the butter up into small chunks and add to the bowl

3. Use your finger tips to rub ingredients until breadcrumbs are formed (thry not to over process at this point)

4. Add egg and stir breifly

5. Gradually add water until the mix starts to form a ball (dont add too much water here)

6. The mix should be fairly formed and crumbly

7. The gluten free pastry is better if kneaded, so knead for 2 mins either in the bowl or on a floured surface

8. You can rest te pastry ball in the fridge for 20 mins if desired

8. Lightly flour the surface ready for rolling

9. Roll the pastry, turning freqently  and using the rolling pin to pick the pastry up and move around.

10. The pastry is ready for using in a large sweet or savoury pies, pasties and cut for tartlets etc


Tartlet ideas: use ready made custart and pour into base, top with fresh berries

Pie ideas: Apple and blackberry pie, beef and onion pie

Pastie ideas: Meat & potato or cheese & onion

Pitta bread

Ditch the sandwiches and choose pittas for great lunch time snacks and parties
250g gluten free flour
2 tsp yeast
2 tsp salt
2 tbsp veg / olive oil
175ml water (you may not need all of this

1. Pre heat the oven to 220°C

2. Add flour, yeast, salt to a bowl and mix

3. Add oil and up to 175ml of water (enough to make a soft dough but not sticky (too dry will result in harder pitta)

4. Knead on a floured surface

5. Divide into 6 equal parts and cover for 40 mins

6. Knead agan and toll into an oval shape

7. Place on a baking tray in the oven for 7-8mins (until golden)

8. Place in a pile in a plastic bag until cool (this keeps them soft

9. Slice lengthways along the side and stuff or slice into dips and use for dipping in soups or dips

Gluten Free Crumpets

Gluten Free Crumpets - top with your favourite breakfast or teatime toppin
300g Gluten Free Flour Mix
2 tsp dried yeast
1 tsp salt
1/2 tsp bicarbonate of soda
200 ml tepid milk
250 ml tepid water


1. Put the flour, yeast and bicarb

2. Mix in the milk and water to form a smooth batter (mix for 5 mins)

3. Cover and leave for 1 hour i a warm place


4. Use a large non stick frying pan and add a drop of oil and spread around.

5. Use a greased crumpet ring, poached egg ring or scone cutter and pour in batter to 1.5 cm depth. 

6. Cook  on one side for 5 mins, remove the ring and cook on the otherside for 1 min


7. Allow to cool and top with cheese, ham, bacon, tomatoes, jam etc!



Gluten Free Bread Recipe (Bread machine)

Easy and tasty gluten free bread recipe - a mix of flours for a perfect load
410ml water
3 eggs
3 tbsp sunflower or olive oil
1 tsp cider vinegar
330g white or brown rice flour
85g tapioca flour
85g cornflour
2 tsp zanthan gum
1 tsp salt
25g sugar
1 1/2 tsp yeast


Add all the ingredients into your breadpan in the order listed

Start your machine on the gluten free listing if available or basic white loaf setting

After 5 minutes, scrape down the mixture from the side of the pan to ensure all ingredients are being mixed


NB - it is helpful to have all ingredients at room temperature to help the yeast
