Apricot & Walnut Quinoa Porridge (or any dried fruit)
350ml Milk (cow's milk, rice milk, coconut milk, almond milk etc)
8 dried apricots (partially hydrated are softer)
8 walnut halves

1. Wash the quinoa (follow the instructions on your packet for washing)
2. Put in a saucepan
3. Add the milk of your choice and just bring to the boil and then simmer for 20 minutes (stir occassionally and ensure it doesnt boil dry)
4. The quinoa will have a slight bite when it is cooked and appear curly. Most of the milk will have been absorbed.
5. Remove from the heat and mix in the apricots
6. Throw the walnuts on the top, a dollop of creme fraiche (Add a splash of milk if preferred)
Add a banana, dried cranberries for more fun and taste

Quinoa Apple Porridge
Delicious porridge, served with your favourite fruit or honey. Perfect if you cant eat oat gluten! Completely gluten free :o)
1/4 cinnamon stick or 1/2tsp ground cinnamon
125ml apple juice
325ml water
.
1. Put all the ingredients in a saucepan and bring to the boil
2. Simmer for 7 minutes (stir occassionally and ensure the pan does not boil dry)
3. Turn off heat and leave for 15 minutes
Serve with (whatever you fancy really)
- cow's milk, rice milk
- sliced apples and sultanas
- honey and banana
- dried cranberries
Cinnamon Quinoa Porridge
1/2 tsp cinnamon
400ml rice milk,coconut milk,cow milk etc
120ml water
20g brown sugar (less if you want your porridge less sweet)
5ml vanilla extract
1/2 tsp salt

1. Heat the saucepan to fairly hot, add in the quinoa and the cinnamon and cook for 3 minutes
2. Add the other ingrediends and bring to the boil, reduce the heat to simmer for 25 minutes, stir frequently
3. If the mixture gets too dry add more water (ensure the porridge doesnt boil dry and burn)
Serve with:
banana and raisins
banana and redcurrants
blueberries and raspberries
bananas and pine nuts
etc....
Buckwheat Porridge
A delicious nutty buckwheat porridge, simply add fruit of your choice!
500ml milk (dairy, soy or rice)
1 tbsp demerera sugar
1. Wash the buckwheat
2. Put the buckwheat, milk and sugar into a sauce, bring to the boil and simmer for 20 mins
Serve with chopped bananas or/and raisins
NB -if you dont like the texture of the seeds you can blend it with a hand blender for a smoother porridge (My daughter prefers a smoother porridge) be careful not to over blend as it can become a bit too paste like
