Choc Pudding In a Mug

A quick gluten free pudding in a mug to please the coeliac and gluten free guest - WHAT a pick - me - up
1 egg
1tbsp cocoa powder (gluten free)
1/4 cup icing sugar
a Microwave!

Crack an egg into a mug, add 1 tablespoon of cocoa powder and a quarter cup of icing sugar. Mix well then pop in the microwave for 40-60 seconds. Serve in the mug with cream or ice cream. Easy and yummy

Lemonade with a few options

Delicious and tangy lemonade, very refreshing on a summer's afternoon, easy for the kids to make and add their special touch
4 lemons
1 litre water (try sparkling water for a fizzy lemonade)
100g caster sugar

1. In a 2 litre jug, add the lemon juice,water and sugar.

2. Stir until the sugar is dissolved

3. Chill and serve with ice



Pour into a tall glass 3/4 full, add/pour orange juice or pomegranite or cranberry juice slowly into the glass, this will add a funky cocktail effect - the kids will love it!


Hang sliced, lemon, oranges and limes, add a cocktail umbrella and straw

Angel Delight strawberry Milk Shake

Deliciously thick gluten free Angel Delight Strawberry Smoothie or Chocolate etc. Perfect for impressing the kids friends when they come for tea!
4 scoops ice cream (1 scoop per person)
2 bananas (1/2 banana per person)
1 sachet Angel Delight (i use the normal AD as i dont buy products with aspartame)
1/2 punnet of strawberries

blueberries to top!

If using chocolate angel delight, sprinkle with grated chocolate

1. Add the ice cream, bananas, strawberries, milk and sachet of angel Delight in a bowl and mix (with a mixer or blender) add more ice cream for a thicker milk shake or more milk for a milkier milkshake

2. Pour into tall glasses and top with fruit and for a treat, sprinkles!


Ginger Lemonade

A thirst quennhing throw it all in a pan delicately flavoured ginger lemonade - Boil, C
2 lemons
2 litres of water
350g to 300g caster sugar (depending on how sweet you like it)
7 slices of fresh ginger
250ml to 500ml lemon juice (optional) (depending on lemony you like it)
lemon sliced


1. In a saucepan heat the water, sugar and ginger until boiling (stir occassionally)

2. Stir in the sliced lemon and leave to cool (approx 15 mins)

3. Remove slices of ginger and lemons

4. Keep refridgerated until needed

5. Serve with ice and a slice (of lemon)


NB you can pour into an ice cube tray ad freeze for great ice cubes


For a more lemony Ginger Lemonade add the 250ml to 500ml of lemon juice into the boiling saucepan with the sliced lemons

Gluten Free Hot Chocolate

A thick and delicious hot chocolate recipe, serves 4 in normal sized mugs. Float some homemade marshmallow!

2 tsp cornflour
1 litre milk (dairy, rice, soya)
200g dark chocolate (at least 70% cocoa), melted in the microwave
2 tbsp honey
1 tsp vanilla essence
Pinch of salt

1. Place the cornflour in a bowl and 100ml of milk and mix until smooth

2. Heat the remainder of the milk in a large sauce until almost boiling

3. Whisk in the melted chocolate, honey, salt and vanilla essence

4. When combined at the cornflour paste

5. Heat the mixture back to the boil, whisking frequently

6. Allow to cool slightly before serving


Top with marshmallows or whipped cream
