Mini Quiches (pastry free)

This is a fabulously easy quiche recipe - pastry free and perfect for snack boxes or fridge treats

This recipe can be proportionally increased to fullfil your needs.

Ingredients

1 egg

1tbsp quark or low fat cottage cheese

1 chiquino pepper (or half a yellow and half a red)

1 mushroom

1 spring onion

seasoning - salt and pepper to taste

 

or mix up with fillings: bacon, ham, plum tomatoes etc

Optional extras: sprinkle with parmesan cheese

 

Method

1. chop the filling ingredients into small pieces

2. mix the egg and quark and season with salt and pepper

3. add the filling to the mix

4. divide the mix into 3 or 4 muffin tin tray sections

5. bake for 20mins at 180C
