Glazed Gammon & Pineapple

Glazed gammon with pineapple and orange sauce,server with rice or mash!



2 smoked gammon steaks, about 225g trimmed of fat

2 tbsp olive oil

1 can pineapple rings in natural juice, you will need the juice

2tbsp GF mango chutney

200ml orange juice

100g frozen peas

100g frozen sweetcorn

100g frozen peas

1 tbsp cornflour


1. Heat a fying pan with the olive oil and add the gammon (you can remove the fat now if required, but leave in pan to cook for added flavour and discard later.) Fry the gammon on both sides for 5 minutes each


2. Drain the pineappe juice and keep for later


3. Cut each ring in half - put halfs on pineapple and season with pepper.


4. Spread the mangi chutney over the steaks and pineapple


5. Add the orange juice and pineapple juice together and poru around steaks


To serve with rice - cook the rice and and then add the sweetcorn and peas.

To serve with mash - cook the mash and serve with sweetcorn and peas.


For the sauce:

Pour the juices from the gammon pan and into a saucepan and add the  cornflour, bring to the boil - Stir until the juices have thickened.Pour over gammon !
