Fish Cakes - Smoked Haddock or Cod

Delightfuly crispy and fun cod or haddock fish cakes. Crunchy coating and gluten free

 

 

Ingredients
450g potatoes cubed
350g smoked haddock OR cod (frozen fillets will do!)
1 hard boiled egg
2 tbsp chives or parsley
2 tbsp of gluten free flour (seasoned with salt and pepper)
1 egg beaten
100g gf breadcrumbs (blitz a few slices of GF bread)
oil for spraying
Salt
Pepper

Method

1. pre heat the oven to 200ºC.

2. boil the potatoes in slightly salted water, drain and mash well

3. Place fish in saute pan and cover with boiling water. Simmer for 5 minutes

4. Drain the fish and remove skin and bones if necessary

5. Mix or mash in the potatoes, fish, hard boiled egg, chives or parsley, salt and pepper an

6. Divide into 6-8 equal portions

7. Shape fishcakes (rounds or triangles or hearts!)

8. Dust the fishcake in the seasoned flour, dip into the beaten egg and coat in breadcrumbs

10. Place on an oiled baking tray, spray fish cakes with a little oil

11. Bake for 10 mins on each side ir until crisp and golden.
