Gluten Free Naan Bread / Indian Flat Bread

A light puffed gluten free naan with a couple of alternative options! Perfect for a curry!

 

 

Ingredients
90 ml tepid milk
3 tbsp natural yoghurt
1 tbsp melted butter or olive oil
225g gluten free bread flour
1 tsp teaspoon salt
1 tsp gluten free baking powder
2 tsp caster sugar
2 tsp dried active yeast
1 egg, lightly beaten
1 teaspoon xanthan gum

melted butter for brushing

Options
Add 1 tsp ground coriander and 1 tsp cumin to flour for a spiy naan

or

Add crushed clove of garlic and a little black course pepper corns

.
Method

1. In a bowl mix the milk 1 tsp sugar and yeast and place in a warm place for 5 mins

2. Sieve the flour, salt, zanthan gum, baking powder into a bowl and add the rest of the  milk,sugar, oil, yogurt, egg and mix until smooth and a dough ball is formed (use a blender if you want to) - add more flour if too sticky - needs to be rollable dough ball

3. Set the oven to the hightest temp and heat a baking tray

4. Divide dough into 6 balls and roll dough to a thickness of about 1/2cm (oval shaped)

5. Place dough onto the hot baking tray and bake the dough for 3-4 mins or until light brown

6. Place under a preheated grill for another minute or until puffed up
