Chicken Jalfrezi

A delicious Chicken Jalfrezi, adjust the 'hot' easily, serve with basmati rice and naan bread!


2 tbsp vegetable oil
1 onion, diced finely
2 tins of tomatoes
2 cloves of garlie or 2 tsp garlic puree
2 tbsp tomato puree
2 chicken breasts, cubed
3 tsp ground cumin
3 tsp ground coriander
3 tsp ground turmeric
1 tsp chilli powder (2 if you like it hot)
1 1/2 tsp salt
2 tbsp root ginger (2 tsp of dried ginger)
2 tbsp ghee or low fat creme fraiche or 2 tbsp of soy creamer
50ml water
25g roughly chopped coriander to garnish if required



1. Use the vegetable oil to fry the onion and chicken (ensure chicken is cooked)

2. Add all the salt, garlic and tomato puree and fry for 2 mins, stir to ensure no sticking

3. Add the tinned tomato, cumin, dried coriander, turmeric ginger and chilli powder


4. Stir in the ghee or creme fraiche

5. Add 50ml of boiling water if more sauce is preferred
