Easy Peasy LEMON CURD Squeezy

Quickly create a delicious lemon curd,ready for your gluten free toast and tarts!
200g caster sugar
3 eggs, beaten well
250ml lemon juice
3 lemon zests
100g unsalted butter, melted


1. In a microwavable bowl, whisk the caster sugar and eggs until smooth.

2. Stir in lemon juice, lemon zest and butter.


Serve with your favourite gluten free toast or add to your gluten freem jam tarts!
